Most of my friends and family know that I love avocados! This recipe is inspired by an appetizer I've always ordered at a restaurant in Okinawa, Japan, called Kitakaisen, and the appetizer was simply called Tomato and Avocado.
This perfect appetizer is great on hot summer days. It's deliciously refreshing.
RECIPE
Serves 2
1 avocado cubed into bite sized pieces
1 medium tomato cubed into bite sized pieces
1-2 tablespoon lite mayo
1 teaspoon wasabi paste or powder *optional*
1.5 teaspoon cold water
Pinch of salt

- Mix the mayo, wasabi, water, and pinch of salt together to a smooth consistency.
- Toss the avocado and tomato together with the mayo wasabi mixture.
